Welcome, welcome! Plain Old Farm is finally here, after too many months to count! We hope you'll enjoy our homegrown family farm produce.

 

Plain Old Farm Pledge:

A special Fall treat:

Zucchini Boats

This is a versatile recipe. Just stuff the zucchini with anything that sounds good to you. Please note that all instructions are approximate!! Adjust to taste, etc.

 

Ingredients:

one oversized zucchini

assorted veggies or ground meat, and/or other goodies (egg, nuts, cheese, bread ....)

 

Chop zucchini in half lengthwise. Scoop out seeds and stringy innards, which you can then compost or discard. Coat insides of zucchini with olive oil. Place the two halves on a pan, outside up, insides down. Bake at 350 degrees until the insides are soft, 45min. to an hour.

 

While the zucchini is baking, stir fry your ground meat, tempeh, onions, or whatever you might

want to stuff into your boats.

 

When soft, scoop out the insides of the zucchini. Mix them with the other ingredients you've chosen for your stuffing.

 

Amri likes the following combination:

1 cup of shredded bread

1 lb of cooked ground bison or beef

1 beaten egg

1 cup grated cheddar cheese

 

Scoop stuffing into the boats. Bake assembled zucchini boats for another 15-20 min. until the bread (if used) is golden brown, and/or cheese (if used) is melted.

Roasted Vegetables.

 

Chop veggies such as potatoes, parsnips, pumpkins or other squash, and onions into 1 1/2"- 2" chunks. You can also add beets, carrots, and yams, and garlic. Mix together and coat with olive oil. You can season the veggies with dried or fresh lavender, marjoram, oregano, basil, rosemary or other herbs. You can also use forest "herbs" to flavor your vegetables, such as of fresh-snipped cedar or Douglas fir needles. Or mix a little of the forest needles with your garden herbs for an intriguing blend!

 

Roast at 375 degrees until vegetables are soft, about 45min to 1 hour. Check every so often so that you can remove any veggies that might cook more quickly

Roasted Garlic Cloves

 

Place individual cloves, or an entire garlic head on a pan. Drench garlic with olive oil. Bake at 375 degrees until insides are soft (I poke the garlic with a serrated knife to check), about 20-30 min.

 

Cut cloves open to enjoy the luscious, creamy insides. Gwynne likes to squeeze out the garlic like toothpaste!
